When salt is dissolved in water, the two major species that are present are NaCl and H2O. One of the defining qualities of these two substances that makes them unique from other compounds is their ability to dissolve easily in water. When a substance dissolves, it breaks up into ions or molecules which can be either positively or negatively charged. In the case of NaCl, there is a large concentration of positively charged ions (Na+) and negatively charged ions (Cl-). The H+ ion from water forms a strong bond with these two opposing charges to create the salt that we enjoy on our meals.
A compound becomes sour when it contains hydrogen ions which are donated by an acid or hydronium ion in solution. One way for liquids like this to exist is if they contain molecules that have both positive and negative ends: one end attracts more protons than what would be expected while another end has stronger attraction for electrons than normal. This type of substance can either donate hydrogen atoms or accept them depending on external factors such as pH level and temperature change. Tartaric acid consists of a molecule with two carboxyl groups and one phenolic group. When this acid is dissolved in water, it splits into hydrogen ions (H+) which reacts with the hydrogens on sodium chloride to form salt, but also release an acidic substance.
The tartaric acid dissolves and breaks down when in contact with the H+ ion from water forming salt as well as releasing an acidic compound that provides sourness. The only difference between these two types of acids are their concentrations because both have similar properties such as being negatively charged or acting like a base due to having multiple negative ends so they can either donate protons or accept them depending on external factors like pH level or temperature change. Salty food generally tastes better because we use our tongue to detect the taste of salt and it is also what triggers our thirst reflex.
The sourness could be due to a reaction between H+ ions from water with an acid that forms hydrogen chloride which gives off strong acidic properties, or maybe even vinegar as well because they are both acids. The more concentrated these types of acids are, then the stronger their flavor will become. Vinegar is usually made by fermenting alcohol like wine into an acetic acid while salinity comes from sodium chloride in oceans and lakes when dissolved in water forming NaCl(sodium chlorides) instead of H+. In this case though, one would think salty food tastes better than sour because we use our tongues for detecting flavors but there may be other factors that can affect our perception of each. For example, there may be an association with sour tasting foods as more acidic and salty food as a savory flavor instead which could change the taste in some way even if these two flavors are made up of different chemical compounds that produce similar tastes.

In conclusion, it’s interesting to learn that both sourness and salinity react differently when dissolved into water because their ionic charges aren’t the same. The major difference between them though is what triggers our thirst reflex–salty creates a craving for liquids but so does acidity despite being worse for us than saltwater or seawater.
