Ingredients:
– Flour (all purpose) – About ⅓ cup to ½ a cup. ** See the note in the recipe about how much you’ll need if using pizza toppings other than cheese. ** You can also substitute all or part of the flour with cornmeal, breadcrumbs, oats or rice flour as desired! This is especially great when cooking for people who are gluten sensitive.
– Sugar – A tablespoon should do it but use more or less depending on your preference and how sweet you want them to be! ** If you’re adding other ingredients like raisins or chocolate chips then definitely add more sugar.
– Salt – A pinch will do but add more or less depending on your preference and how salty you want them to be! ** If you’re adding other ingredients like garlic powder, onion powder, oregano or basil then definitely add salt. This is especially important if using a cheese with no added sodium such as mozzarella.
– Butter (unsalted) – About ½ of a stick should work just fine unless you are cooking for people who don’t eat dairy products in which case use oil instead of butter! ** I find that this works best when the ratio is about half flour/half fat though feel free to experiment as desired!
Melt the butter over low heat while stirring until it’s melted
– Brown sugar – I usually use about a cup per batch of chips but depending on how sweet you want them to be, start with less and then add more as needed!
If using this in conjunction with salt or garlic powder/oregano/basil then mix it all together first before adding the rest.

Slowly stir in flour while continuing to cook over low heat for 15 minutes stirring occasionally (or up to 20) Allow dough that’s formed at bottom of pan after making saucepan cheese dip from mixing your ingredients together rise up towards the top by slowly turning down the heat. Be patient because it may take awhile even if there is no more liquid in the pan.
– Chocolate – I recommend using a high percentage of cacao to make these as dark chocolate will be too bitter for this recipe (70% is ideal) If you are adding any other flavors or ingredients, please read below!
Add milk to melted butter and sugar mixture then wait until it’s cooled off before whisking in eggs one at a time. Slowly mix in flour while stirring constantly with wooden spoon After dough has formed on bottom of saucepan from mixing your ingredients together turn down heat if necessary so that it doesn’t bubble up over sides OR leave pot uncovered once boiling Once all dry ingredients have been mixed into wet ones, add either cocoa powder/chocolate chips whichever you prefer and whisk until smooth
You can now either spoon chocolate mixture into individual cupcake papers OR pour it evenly across the pan to create a thin layer of brownie. I recommend making this recipe for 12-16 servings and waiting until they have cooled off before serving if you are adding any other flavors or ingredients!
